Butterfly pea flowers range from white to intense blue, and are grown in South East Asia. The blue colour is due to their high content of anthocyanin— antioxidant pigments also found in other blue and purple fruits and and vegetables. Butterfly Pea has been used in Ayurvedic medicine to treat multiple ailments. A gorgeous deep violet-purple colour in the jar, once it is added to warm water it changes colour to a beautiful sky blue, due to the pH (acidity level) of honey. Butterfly Pea is known as a calming botanical that helps to reduce anxiety.
